Picture and a Recipe


Heading to bed last night we wondered where Lyla had gone as she usually heads in a take a peak at the kids before coming into our room for the night. This is what we found. Sorry the picture is a little dark, but there is Lyla sound asleep with Clara!

One Pan Veggie Lasagna:

1 lb ground beef, chicken or turkey
1 onion
2 summer squash
1 large bunch swiss chard
1 clove garlic
salt and pepper to taste
1 can spaghetti sauce
2 cups cheese

in a large cast iron (or something like it) pan, brown the meat with the onion and garlic. Add in chopped chard and squash. Cook until just tender. Add in sauce and stir well. Top with cheese and bake at 350* until everything is tender and cheese is melted. Serve with corn bread.

Aaron says this is his new favorite. This could easily be make for a much large family, but this was enough for our family of 5.
